Southwestern Cornbread
Ingredients
- 2 cup yellow cornmeal 288g
- 2 cup all-purpose flour 290g
- 2 tablespoon baking powder 28g
- 2 1/2 teaspoon salt 18g
- 1/2 teaspoon ground cumin
- 1/2 cup sugar 100g
- 2 cup buttermilk 492g
- 1/3 cup vegetable oil 75g
- 5 tablespoons melted butter
- 2 eggs
- 15 ounces creamed corn
- 4 ounces diced green chili peppers
- 7 ounces pickled jalapeños with juice drained
- 8 ounces shredded cheddar cheese
- 8 ounces shredded pepper jack cheese
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the yellow cornmeal, all-purpose flour, baking powder, salt, and ground cumin.
- Add the buttermilk and vegetable oil to the dry ingredients.
- Stir in the diced green chili peppers and drained pickled jalapeños.
- Add the shredded cheddar cheese and pepper jack cheese to the mixture, and stir until well combined.
- Grease a 9×13-inch baking pan.
- Pour the savory southwestern cornbread batter into the prepared baking pan.
- Bake in the preheated oven for approximately 40 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
- Remove the cornbread from the oven and allow it to cool slightly.
