Hot Cross Buns with Enriched Dough | Super Fluffy

Hot Cross Bun Recipe – Chat

Ingredients:
Dry:
4 c. bread flour
1/2c. Sugar
1 tsp. salt
1 1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. ground ginger
1/4 tsp. ground cloves

Yeast Mix:
1 T. instant yeast
2 tsp. Sugar
1/2c. Warm water

Wet:
1/4 c. unsalted butter, melted
1 c. whole milk, warmed
2 large eggs, room temperature
1tsp. Vanilla

Add Ins:
1c. raisins or chocolate chips

For the crosses:
1/4 c. all-purpose flour
2 1/2 T. Water

For the glaze:
1/2 c. powdered sugar
1 T. milk
1/4 tsp. vanilla extract

Directions:

  1. Mix together yeast, sugar and warm water. Let sit and bubble.
  2. In a large mixing bowl, whisk together the bread flour, sugar, salt, cinnamon, nutmeg, ginger, and cloves.
  3. In a separate mixing bowl, whisk together the melted butter, warm milk, eggs and vanilla until combined.
  4. Make a well in the center of the dry ingredients and pour in the wet mixture and yeast mixture. Mix until just combined, then stir in the raisins or chocolate chips.
  5. Place the dough in a lightly greased bowl and cover with a clean towel. Let rise in a warm place for about 1 1/2 hours or until doubled in size.
  6. Punch down the dough and divide it into 12 equal portions. Roll each portion into a ball and place them in a lightly greased 9×13 inch baking dish. Cover and let rise for another 30-45 minutes.
  7. Preheat the oven to 375°F. In a small bowl, mix together the flour and water to make a paste for the crosses. Transfer the paste to a piping bag and pipe crosses onto the buns.
  8. Bake the buns for 20-25 minutes, or until golden brown and cooked through.
  9. While the buns are baking, make the glaze by combining the powder sugar, milk and vanilla extract in a small bowl and whisk togther.
  10. Remove the buns from the oven and brush them with the glaze while still warm. Serve and enjoy!
