Ingredients
  

  • 1 c. quinoa
  • 1/2 c. lentils
  • 3 c. vegetable broth
  • 1 small onion chopped
  • 3 large bell peppers
  • 3 cloves garlic minced
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. garlic powder
  • 2 tsp. italian seasoning
  • 1 1/2 tsp. thyme
  • 1/2 tsp. paprika
  • 1/2 tsp. cumin
  • 1 can fire roasted tomoatoes
  • 1 can black beans
  • 8 oz. tomatoe sauce
  • 2 handlfuls spinach chopped
  • 8 oz colby jack cheese

Optional :

  • 1 lb. ground turkey sausage

Instructions
 

Prepare Quinoa and Lentils:

  • Rinse 1 cup of quinoa and 1/2 cup of lentils.
  • In a rice cooker, combine quinoa, lentils, and 3 cups of vegetable broth.
  • Cook in the rice cooker until done.

Sauté Onions and Bell Peppers:

  • In a pan over medium heat, sauté the chopped onion in oil until translucent.
  • Add the bell peppers and continue cooking until they begin to soften.

Season and Add Ingredients:

  • Add minced garlic to the pan and sauté briefly.
  • Season with salt, pepper, garlic powder, Italian seasoning, thyme, paprika, and cumin. Stir well.
  • Add fire-roasted tomatoes, black beans, tomato sauce, and chopped spinach to the pan.

Cheese Prep:

  • While the mixture simmers, grate 8 oz of colby jack cheese.

Combine and Bake:

  • Once the quinoa and lentils are cooked, mix them in a casserole dish.
  • Pour the sautéed vegetable mixture on top and stir until well combined.
  • If desired, add the ground turkey sausage at this point.
  • Sprinkle the grated colby jack cheese evenly over the top.
  • Bake at 375°F for 25 minutes, or until the cheese is melted and bubbly.

Serve and Enjoy:

  • Allow the dish to cool slightly before serving.
