Mini Quiche for Brunch

Ingredients:

Egg Mixture:

  • 6 eggs
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup half & half

Add-Ins:

  • 1 tablespoon ham or meat of choice (diced)
  • 1 tablespoon Swiss cheddar mix or cheese of choice (shredded)

Other:

  • 1 package store-bought pie crust, cut into 12 rounds

Instructions:

  1. Preheat your oven to 400°F (200°C). Grease a 12-cup muffin tin with non-stick cooking spray or butter.
  2. In a mixing bowl, whisk together the eggs, salt, pepper, and half & half until well combined. Set aside.
  3. Roll out the store-bought pie crust and cut it into 12 rounds to fit the muffin tin.
  4. Press each pie crust round into the greased muffin tin, making sure to cover the bottom and sides of each cup.
  5. Place a tablespoon of the desired add-ins (ham or meat, and cheese) into each muffin cavity.
  6. Give the egg mixture a quick stir, then pour about 2 tablespoons of the egg mixture into each muffin cup, filling them almost to the top.
  7. Place the muffin tin in the preheated oven and bake for 7 minutes. After 7 minutes, rotate the muffin tin to ensure even cooking, and bake for an additional 7 minutes, or until the quiches are set and the tops are golden brown.
  8. Check the internal temperature of the quiches with a meat thermometer, and make sure it reads 165°F (74°C) to ensure they are fully cooked.
  9. Once cooked, remove the muffin tin from the oven and let the mini quiches cool for a few minutes.
  10. Carefully remove the mini quiches from the muffin tin using a spoon or butter knife.
  11. Serve the mini quiches warm as a delightful appetizer or breakfast option.
