- 6 eggs
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 cup half & half

- 1 package store-bought pie crust, cut into 12 rounds
Instructions:
- Preheat your oven to 400°F (200°C). Grease a 12-cup muffin tin with non-stick cooking spray or butter.
- In a mixing bowl, whisk together the eggs, salt, pepper, and half & half until well combined. Set aside.
- Roll out the store-bought pie crust and cut it into 12 rounds to fit the muffin tin.
- Press each pie crust round into the greased muffin tin, making sure to cover the bottom and sides of each cup.
- Place a tablespoon of the desired add-ins (ham or meat, and cheese) into each muffin cavity.
- Give the egg mixture a quick stir, then pour about 2 tablespoons of the egg mixture into each muffin cup, filling them almost to the top.
- Place the muffin tin in the preheated oven and bake for 7 minutes. After 7 minutes, rotate the muffin tin to ensure even cooking, and bake for an additional 7 minutes, or until the quiches are set and the tops are golden brown.
- Check the internal temperature of the quiches with a meat thermometer, and make sure it reads 165°F (74°C) to ensure they are fully cooked.
- Once cooked, remove the muffin tin from the oven and let the mini quiches cool for a few minutes.
- Carefully remove the mini quiches from the muffin tin using a spoon or butter knife.
- Serve the mini quiches warm as a delightful appetizer or breakfast option.
