Lamb Meatballs with Pomegranate Glaze

Ingredients:

For the Meatballs:

  • 1 lb. ground lamb
  • 1/2 cup diced scallops
  • 4 tsp. minced garlic
  • 2 eggs
  • 1/4 cup chopped mint
  • 1 tsp. cumin
  • 1 tsp. cinnamon
  • 1 tsp. coriander
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 cup Italian bread crumbs

For the Pomegranate Glaze:

  • 1/4 cup shallots, finely chopped
  • 1 1/2 cups pomegranate juice
  • 2 tablespoons honey
  • 1 teaspoon balsamic vinegar
  • Pinch of salt and pepper
  • 1/8 teaspoon allspice

Other:

  • 1 pack refrigerated pie crust, cut into 12 rounds for muffin pan

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with non-stick cooking spray or butter.
  2. In a large mixing bowl, combine the ground lamb, diced scallops, minced garlic, eggs, chopped mint, cumin, cinnamon, coriander, salt, pepper, and Italian bread crumbs. Mix well until all the ingredients are evenly combined.
  3. Take a portion of the meatball mixture and shape it into a small meatball. Repeat until all the mixture is used, making approximately 12 meatballs.
  4. Place each meatball into the greased muffin tin, one meatball per cup.
  5. In a small saucepan, combine the shallots, pomegranate juice, honey, balsamic vinegar, salt, pepper, and allspice. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for about 10 minutes until the sauce thickens slightly.
  6. While the glaze is simmering, roll out the refrigerated pie crust and cut it into 12 rounds to fit the muffin pan. Press each round into the muffin tin, covering the meatball.
  7. Once the glaze has thickened, remove it from the heat. Spoon a small amount of the pomegranate glaze over each meatball, ensuring they are well coated.
  8. Place the muffin tin in the preheated oven and bake for approximately 20 minutes, or until the meatballs are cooked through and the pie crust is golden brown.
  9. Remove the muffin tin from the oven and let it cool for a few minutes.
  10. Carefully remove the lamb meatballs with pomegranate glaze from the muffin tin, using a butter knife or spoon.
  11. Serve the lamb meatballs warm as an appetizer or main dish. You can garnish them with additional chopped mint or pomegranate seeds for extra flavor and presentation.
