Ingredients
- 12 cooked lasagna noodles
Filling:
- 24 oz. cottage cheese
- 6 oz. jack cheese
- 2 tsp. salt
- 2 tsp. pepper
- 1 T. Italian seasoning
- 1 T. basil
- 1 1/2 tsp. garlic powder
Optional:
- Fresh spinach leaves
Meat:
- 1 lb. chicken shredded
- 1/2 lb. bacon chopped
Sauce:
- 10 oz. Parmesan cheese freshly grated
- 1/2 tsp. pepper
- 3/4 tsp. salt
- 3/4 tsp. Italian seasoning
- 3 cloves garlic minced
- 8 T. butter chopped into cubes
- 2 c. heavy cream
Topping:
- 12 oz. mozzarella cheese
Instructions
Prepare the Lasagna Noodles:
- Cook 12 lasagna noodles according to package instructions until slightly soft. Drain and set aside.
Prepare the Filling:
- In a bowl, mix 24 oz. cottage cheese with jack cheese, salt, pepper, Italian seasoning, basil, and garlic powder.
- Optionally, add fresh spinach leaves to the filling.
Prepare the Meat:
- Shred 1 lb. of chicken.
- Chop 1/2 lb. of bacon.
Prepare the Sauce:
- In a saucepan, melt 8 T. of butter. Add minced garlic and cook for 1 minute.
- Pour in 2 c. heavy cream and bring to a simmer.
- Season with salt, pepper, and Italian seasoning.
- Add 10 oz. freshly grated Parmesan cheese to the pan, stirring until melted.
Assemble the Rolls:
- Preheat the oven to 375°F (190°C).
- In a baking dish, add a layer of the Alfredo sauce.
- Portion the filling and spread it onto each cooked lasagna noodle.
- Roll up each noodle, placing the seam side down in the baking dish.
Final Assembly:
- Pour the remaining Alfredo sauce evenly over the rolled lasagna noodles.
- Sprinkle 12 oz. of mozzarella cheese on top, ensuring full coverage.
Bake:
- Bake in the preheated oven for 20 minutes.
- Switch to low broil for an additional 2 minutes for a golden-brown top.
