Biscuits and Gravy Casserole Recipe:

Ingredients for Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon salt
  • 1/2 cup unsalted butter cold and diced
  • 1 cup buttermilk
  • 1 tablespoon honey

Ingredients for Sausage:

  • 1 pound ground turkey sausage or pork, bacon, or a combo
  • Olive oil for drizzling
  • 1/2 teaspoon Sage
  • 1/2 teaspoon thyme
  • 1/2 teaspoon rosemary

Ingredients for Gravy:

  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • 1 teaspoon salt
  • 2 1/2 teaspoons pepper

Additional Ingredients for Assembly:

  • 8 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon Salt
  • 1/2 teaspoon pepper

Shredded cheese (for layering):

  • 4 oz Monterey Jack cheese
  • 4 oz Cheddar cheese

Instructions
 

Biscuits:

  • In a large bowl, mix flour, sugar, baking powder, baking soda, cream of tartar, and salt.
  • Add diced cold butter and cut it into pea-sized pieces using a butter cutter, food processor, or hands.
  • Combine buttermilk and honey, then add to the flour mixture, mixing until just combined.
  • Pat the dough on a floured surface, fold it, and repeat to create layers.
  • Place on a parchment-lined tray, and refrigerate.
  • Cut the biscuits into 1-inch pieces before assembly.

Sausage:

  • In a pan, sauté ground turkey sausage with a drizzle of olive oil.
  • Add sage, thyme, rosemary (to taste), and cook until browned.
  • Set aside in a bowl.
  • Drain excess grease if needed

Gravy:

  • In the same pan, melt butter and whisk in flour to create a roux.
  • Slowly add milk, stirring continuously to avoid lumps.
  • Season with salt and pepper, simmer until thickened, scraping up any bits from the sausage.

Assembly:

  • Preheat the oven to 350°F (175°C).
  • Cut biscuits into 1-1.5 inch pieces.
  • In a greased baking dish, layer half of the biscuits, half of the sausage, and a sprinkle of cheese.
  • Repeat the layers with the remaining ingredients.
  • Whisk together eggs, milk, salt, and pepper. Pour over the casserole.
  • Pour the prepared gravy evenly over the layers.
  • Bake for 35-45 minutes or until biscuits are golden and fluffy and eggs are cooked.

Additional Tips:

  • Customize the protein with bacon or ham.
  • Choose your gravy amount. Like extra gravy make more and have on the side.
