Ingredients
  

Dough:

  • 4 1/2 c. All purpose flour 584g
  • 1/3 c. Sugar 66g
  • 1 pack yeast 8g
  • 1 T. Salt
  • 3 Eggs
  • 2/3 c. Buttermilk 160g
  • 6 T Butter 85g
  • 2 T. Honey 36g
  • 1 tsp. Vanilla extract 6g

Apple Filling:

  • 1 lb. Apples peeled & chopped
  • 2 T. Butter
  • 2 T. Heavy cream
  • 1 tsp. Vanilla extract
  • 1/4 c. Brown sugar
  • 1 tsp. Cinnamon
  • 1/4 tsp. Nutmeg
  • 1/8 tsp. Cloves
  • 1/4 tsp. Salt
  • 2 tsp. Corn starch

Spread:

  • 1/2 c. Butter soft (113g)
  • 1/2 c. Brown sugar
  • 1 1/2 T. Cinnamon

Crumb:

  • 1/2 c. All purpose flour
  • 2 T. Sugar
  • 1 T. Brown sugar
  • 2 T. Butter soft
  • 1/4 tsp. Cinnamon
  • Pinch of salt

Icing:

  • 4 oz. Cream cheese
  • 4 T. Butter 85g
  • 1/2 tsp. Vanilla extract
  • Pick of salt
  • 1 1/4 c. Powder sugar

Instructions
 

Prepare the Apple Filling:

  • Peel and chop apples.
  • In a pan, combine apples, butter, heavy cream, vanilla, brown sugar, cinnamon, nutmeg, cloves, salt, and corn starch.
  • Cook on medium heat until apples are tender and aromatic.

Prepare the Dough:

  • In a mixing bowl, combine flour, sugar, yeast, and salt.
  • In a separate container, mix eggs, buttermilk, melted butter, honey, and vanilla.
  • Combine wet and dry ingredients, kneading until elastic. Allow it to rest for 10-15 minutes.

Prepare the Spread and Crumb:

  • Mix together soft butter, brown sugar, and cinnamon for the spread.
  • For the crumb, blend flour, sugar, brown sugar, soft butter, cinnamon, and a pinch of salt until crumbly.

Roll and Assemble:

  • Roll out the dough and spread the cinnamon filling.
  • Cut, shape, and place in a casserole dish.
  • Add the cooled apple filling to each square and fold.

Proof and Bake:

  • Allow the assembled bombs to proof in a 150-degree oven.
  • Sprinkle crumb topping and bake at 375 degrees for 25 minutes.

Prepare the Cream Cheese Icing:

  • Blend cream cheese, butter, vanilla, salt, and powdered sugar until smooth.

Finish:

  • Once baked, pipe the cream cheese icing over the bombs.
  • Let them cool slightly before indulging in these irresistible Apple Betty Cinnamon Bombs.
