Ingredients
  

  • 8 ox Muenster Cheese
  • 4 oz Swiss
  • 8 oz Cheddar
  • 8 eggs
  • 1 cup Milk
  • 1 cup Heavy Cream
  • 32 oz dice potatoes
  • 1 small diced onions
  • 1 clove minced garlic
  • 1 lb. Corned Beef chopped
  • 2 tsp. Salt
  • 2 tsp. Pepper
  • 1/4 tsp. Mustard Powder
  • 1/2 tsp. Oregano
  • 1/2 tsp. Thyme

Instructions
 

Prepare Eggs and Dairy:

  • In a large bowl, whisk together 8 eggs, 1 cup of milk, and 1 cup of heavy cream until well blended. Set aside.

Sauté Onions and Garlic:

  • In a pan, sauté the diced onions until translucent. Add minced garlic and cook until aromatic. Turn off the heat.

Season Potatoes:

  • In a separate bowl, combine diced potatoes with 2 tsp. salt, 2 tsp. pepper, 1/4 tsp. mustard powder, 1/2 tsp. oregano, and 1/2 tsp. thyme. Stir to coat evenly.

Combine Ingredients:

  • Add the sautéed onions and garlic to the seasoned potatoes, ensuring an even incorporation.

Layering in the Pan:

  • Butter a 12-inch cast iron skillet generously. Begin layering with potatoes, followed by chopped corned beef, and a layer of the cheese trio (Muenster, Swiss, and Cheddar). Repeat until ingredients are used up.

Pour Egg Mixture:

  • Pour the whisked egg and dairy mixture over the layered ingredients. Ensure the eggs fill in the cracks between the meat, cheese, and potatoes.

Bake to Perfection:

  • Bake in a preheated oven at 375°F for 1 hour and 20-25 minutes in the 12-inch cast iron skillet, or 50-55 minutes in a 9×13 pan. Ensure the internal temperature reaches 165°F in the middle.

Final Touch:

  • Allow it to cool slightly before slicing into this savory sensation. The extra baking time brings out the rich flavors and textures.
