Cilantro Lime Rice

Cilantro Lime Rice

Ingredients
  

  • 2 1/4 cups brown rice
  • 6 cups water

To Add to Cooked Rice:

  • Juice of 1 lime
  • 1 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/3 – 1/2 cup cilantro chopped

Instructions
 

Cook the Rice:

  • Rinse the brown rice under cold water until the water runs clear.
  • In a large pot, bring 6 cups of water to a boil.
  • Add the rinsed rice to the boiling water. Reduce the heat to a simmer and cover the pot.
  • Let the rice cook until it is tender and all the water has been absorbed (about 30-45 minutes, depending on the type of brown rice). Avoid stirring the rice while it’s cooking to prevent it from becoming mushy.

Prepare the Flavorings:

  • While the rice is cooking, juice 1 lime and chop the cilantro.

Flavor the Cooked Rice:

  • Once the rice is cooked, remove it from the heat and let it sit covered for 5 minutes.
  • Fluff the rice with a fork to separate the grains.
  • Add the lime juice, salt, and garlic powder to the rice. Gently stir to distribute the flavors evenly.
  • Fold in the chopped cilantro, adjusting the amount to your taste preference.

Serve:

  • Serve the cilantro lime brown rice warm as a side dish or use it as a base for bowls and burritos.
