Marshmallows
Ingredients
Mix:
- 21 g Unflavored Gelatin 3 envelopes
- 118 g cold water 1/2c
Heat:
- 400 g Sugar 2 cups
- 220 g Light Corn Syrup 3/4cup
- 59 g Water 1/4c
Mix In:
- 1/2 tsp Salt
- 1 T Vanilla bean or combination of other flavor extracts
- Powder Sugar
Instructions
- Use an 8 x 8 inch pan spayed with pam and lined with parchment paper. Set aside.
- In the bowl of a stand mixed, sprinkle gelatin over cold water. Soak fro 10 minutes.
- Meanwhile, combine sugar, corn syrup and water in a pot, whisking only until the sugar is dissolved. Bring the mixture to a rapid boil. As soon as it is boiling, set the timer and allow to boil hard for 1 minute without stirring.
- Carefully pour the boiling syrup into the soaked gelatin, add salt and turn on the mixer, using the whisk attachment, starting on low and moving up to high speed, #8. Beat for 10 minutes or until fluffy and mostly cooled to almost room temperature. After it reaches that stage, add in the extract and beat for 1-2 minutes on high speed, #8, to incorporate.
- Spray pam on silicone spatula and off set spatula. Pour marshmallow into pan using silicone spatula to scrape to get it all out. Use off set spatula to smooth marshmallow into pan. Spray plastic wrap with cooking spray and smooth on surface of marshmallows.
- Let sit over night or 24 hours.
- Sprinkle cutting board or counter with powder sugar. Remove marshmallow from pan and lay on powder sugar. Dust with powder sugar. Use a large sharp knife to cut into squares. Separate pieces and toss to coat all surfaces with powder sugar.
- Store in airtight container.
- Makes about 745g
- For Off the Wagon, makes 42 (17g-20g) marshmallows
- Cut across 1″ strips (width of ruler)
- Cut each of those strips into 6 equal cubes.
