- 1 gallon apple juice
- 4 cups orange juice
- 2 cups pineapple juice
- 1 cup lemon juice about 7 medium lemons
- 2 cinnamon sticks
- 2 teaspoons whole cloves
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground ginger
- 1/8 teaspoon ground nutmeg
- 1 cup sugar or to taste
In a large pot, combine the apple juice, orange juice, pineapple juice, and lemon juice.
Add the cinnamon sticks, whole cloves, ground cloves, ground ginger, ground nutmeg, and sugar to the pot.
Heat the mixture over medium heat until it reaches a simmer.
Reduce the heat to low and let the wassail simmer for about 1 hour, stirring occasionally. This allows the flavors to meld and the spices to infuse into the drink.
After simmering, remove the pot from the heat.
Optionally, strain the wassail to remove the spices if you prefer a smoother drink, or leave them in for a more rustic presentation.
